At the end of September we made our annual Apple Picking trip to Warwick, NY. Gia was so excited to pick the apples and then make pies together. (She loves to cook like her mama.)
We spent about an hour wandering through the orchards, picking apples and tasting all the different kinds. I gave Nicholas a little bite and he promptly spit it out. But then Jon cut a slice off and handed it to him, and he was in his glory. This kid loves to hold food like a big boy and take bites.
As we were on our way out of the orchards we passed a grove of trees with Gala apples so Jon pulled over and I hopped out to get a few of them, because they’re my favorite apple to eat. While I was out picking, Jon gave Gia a little lesson in the different types of apples and she’s be obsessed ever since. She loves telling people that we picked “ampires, Joanie Golds and Gaaaalas”. Wait, you don’t have ampires and Joanie Golds by you? You have Empires and Jona Golds? Pffffft. They’re not nearly as cool as Gia’s kind 😉
After Jon took this picture (above) Gia asked to see it. So I showed her the back to the camera and she took one look at herself and asked why she wasn’t smiling. Laughing, I told her I wasn’t sure. A little while later I took this one of Jon with the kids and she made sure to smile — and point out to me that she was smiling.
The next day we made 4 pies with my favorite Apple Pie with Struesel Topping. Here’s the recipe.
For the pie
- 1 pie shell
- 5 cups of apples, peeled sliced and cored (We use this gadget and LOVE it.)
- 2/3 cup white sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons butter
For the topping
- 3/4 cup flour
- 1/2 teaspoon cinnamon
- 1/2 cup packed brown sugar
- 3/4 cup rolled oats
- 1/3 cup butter
- Preheat oven to 425 degrees F (220 degrees C). Fit pastry shell into pie pan.
- For the filling: Place apples in a large bowl. In a separate bowl combine 2 tablespoons flour, white sugar, 1/2 teaspoon cinnamon and nutmeg. Mix well, then add to apples. Toss until apples are evenly coated.
- Place apple mixture in pie shell and dot with 2 tablespoons butter. Lay a sheet of aluminum foil lightly on top of filled pie, but do not seal.
- Bake in preheated oven for 10 minutes.
- While filling is baking, make Streusel Topping: In a medium bowl combine 3/4 cup flour, 1/2 teaspoon cinnamon, brown sugar, and oats. Mix thoroughly. Then, using a pastry blender or a fork, cut in 1/2 cup butter or margarine until mixture is crumbly.
- Remove pie from oven and sprinkle streusel on top.
- Reduce heat to 375 degrees F (190 degrees C). Bake an additional 30 to 35 minutes, until streusel is browned.
